Lamb's lettuce, corn salad, or Rapunzel salad - which is which?
In fact, all of these terms refer to the same salad: lamb's lettuce. Because it was simply a wild herb long before it became a popular salad, it developed a wide variety of names in different regions and contexts:
- Lamb's lettuce: The most commonly used name for this popular type of lettuce and probably also the name that led you to this recipe, right?
- Field salad: This name emphasizes the plant's origins. It used to grow wild frequently in fields and farmland, where it was gathered. Only afterward did people begin cultivating the salad deliberately.
- Rapunzel salad: An older, almost historical name for lamb's lettuce. Many people know it from the fairy tale "Rapunzel" - although the salad plays a less appetizing role there.
- Corn salad: Corn salad is the Austrian and, in some cases, southern German name for lamb's lettuce. The name probably refers to the small leaves, which resemble birdseed.
Today, lamb's lettuce is the best-known name. But you can also call our recipe corn salad dressing, Rapunzel salad dressing, or field salad recipe - it always means the same delicious dressing!

Delicious croutons for your lamb's lettuce
I love croutons with lamb's lettuce - especially when they're really flavorful. So whenever I want to prepare lamb's lettuce, I always make sure I have some sourdough bread or a baguette at home.
Quick recipe for delicious garlic and herb croutons: Cut a piece of sourdough bread or baguette into small cubes. Heat 3 tbsp of olive oil in a pan and add 1-2 finely chopped cloves of garlic. Stir everything briefly, then add the bread cubes. Season with a pinch of salt and pepper and dried herbs of your choice. Toast the croutons over medium heat for about 5 minutes, turning them regularly. Let the croutons cool briefly, then sprinkle them over your lamb's lettuce just before serving. Sooo delicious!
