    Warm the water slightly, dissolve the yeast in it, and add the maple syrup. Let this mixture sit for 10 minutes.

    Mix all the dry ingredients together.

    Now add the dry ingredients and the quark to the yeast water and knead the dough for about 10 minutes.
    Note: It is completely normal for the dough to still be slightly sticky!

    Let the dough rise, covered (simply with a kitchen towel), in a warm place for 1-1.5 hours.

    Shape the dough into 8 round rolls and place them on a baking sheet lined with parchment paper. If the dough is very sticky, you can moisten your hands with water.

    Let the rolls rest covered for another 30-45 minutes, and meanwhile preheat the oven to 230 degrees using conventional top and bottom heat.

    Cut a cross into the top of the protein rolls, spray them with water or brush them with water, and sprinkle your choice of grains and seeds on top.

    Into the oven! Let the rolls bake for about 10 minutes on the middle rack. Then reduce the temperature to 200 degrees, switch the oven to convection, and bake them for another 8-12 minutes. If they turn brown on top, that’s a good sign that they’re done.
    Tip: Place an ovenproof bowl filled with hot water in the oven to create steam!

    Let the rolls cool on a wire rack and enjoy them with a topping of your choice!
    If you want a crispy crust, briefly (!) cover the rolls with a damp cloth.

    Bake protein rolls yourself

    Our quark rolls are based on carefully selected ingredients:

    • contain fiber from the seeds and kernels

    • contain protein from the protein powder and quark

    • contain unsaturated fatty acids from the seeds and kernels

    A little tip: You can also freeze the protein rolls. This keeps them fresh for a long time, and you can simply defrost them when needed. Alternatively, you can store them in an airtight container - this way, they will keep for several days at room temperature. If they become a little dry, you can moisten them slightly with water and bake them briefly in the oven again - within a few minutes, they will be as good as fresh and wonderfully crisp.

    Variations

    Are regular protein rolls too boring for you, and are you in the mood for something new? Hold on: With this simple high-protein roll recipe, you can also easily make sweet rolls or protein pizza rolls yourself!

    • Sweet rolls: Replace the neutral protein powder with chocolate protein powder or banana protein powder and add more sweetness. Bake your rolls as usual - just leave out the additional toppings.

    • Pizza rolls: Leave out the seeds as a topping and add Italian herbs to the dough instead. Bake the protein rolls as usual. Once they have cooled, slice them open and top them like a pizza with tomato sauce, mushrooms, onions, (vegan) cheese, and anything else your heart desires. Now place them in the oven at 180 degrees fan-assisted (on a relatively high rack) and bake them briefly until the cheese has melted.
