If you feel the same, I have good news for you: with our recipe, you can easily make vegan protein muffins with blueberries yourself. Moist, fruity, sweet, and incredibly delicious with an extra boost of protein!

    Preheat the oven to 180 degrees Celsius (top/bottom heat).

    First, we need to make vegan buttermilk. To do this, mix soy milk and lemon juice and let the mixture sit for 5-10 minutes. Don’t be alarmed if the texture changes; that’s normal and shows your milk is turning into buttermilk.

    Meanwhile, mix flour (except 1 tbsp), protein powder, baking powder, salt, and starch.

    Now add maple syrup, oil, and vanilla extract to your buttermilk and stir briefly.

    Pour the wet ingredients into the dry ones and mix everything well. Caution: don’t overmix your batter.

    Toss the berries in 1 tbsp of flour and fold them into the batter. If you’re using frozen berries, please do not thaw them beforehand; just add them frozen to the batter!

    Place muffin liners in your muffin tin, distribute the batter into 16 liners, and off to the oven you go.

    Bake the muffins for about 25 minutes on the middle rack. Your protein muffins are ready when they are golden brown and pass the classic toothpick test:

    To check, poke the muffins with a wooden skewer – if only a few small crumbs stick to it, they are done. But if batter still clings to the skewer, your muffins need a bit more time.

    Recipe Note

    Tip: If your vegan protein muffins brown on top before the baking time is up, you can cover them with some aluminum foil.

    For me, our muffins are the best protein muffin recipe in the whole “high protein blueberry muffins” bubble.
    Why? Well, where do I start... they are super tasty, moist, and fruity, and you don’t notice they are high protein when eating. And anyone who has tried several protein recipes probably knows what I mean. The protein muffins just taste like delicious muffins, like the ones you used to get at kids' birthday parties. And that’s exactly what we want – great taste with a bit better nutrition.

    How about lemon or chocolate protein muffins instead? No problem at all, you can easily adjust the recipe: simply add some lemon zest or cocoa powder to the batter instead of berries and use a different type of protein powder. Now you have a fantastic recipe for your favorite muffins!
