Zubereitung
Make a flaxseed egg! To do this, mix 1 tbsp ground flaxseeds with 3 tbsp hot water and let the mixture swell for 10 minutes. You'll see that the consistency changes: the mixture becomes thicker and gel-like - similar to egg white.
Now add the flaxseed egg and all the other ingredients except the oil to a blender and blend everything until a smooth batter forms. Now you can also taste the batter and decide whether you want to sweeten it a little more!
Heat some coconut oil in a pan over medium heat and add small portions of batter to the pan. Use either 1 tbsp if you want mini pancakes, or about 3-4 tbsp if you want large protein pancakes.
Cook the pancakes over medium heat. As soon as you see small bubbles on the surface, you can flip the pancakes once. They will be almost done. Just wait until the underside is nicely golden brown.
Add toppings to your protein pancakes as desired and enjoy!

Recipe Note
Don't have a blender? No problem! Prepare your flaxseed egg as usual. Then mash the banana with a fork - the riper it is, the easier this will be. Add all the ingredients except the oil to a large bowl and whisk the mixture into a smooth batter.
A little tip: Just before cooking, add a small (!) splash of sparkling water to the batter and carefully stir it in. This makes your high-protein pancakes extra fluffy!

Very important: Simply use unflavored protein powder for this, not vanilla-flavored powder and no additional sweetener!

You can also easily turn your protein pancakes into delicious fruit pancakes. Whether apples, (wild) blueberries, or strawberries - the combination of fruit and pancakes is simply heavenly!
Here's how: Cut your fruit into thin slices or small pieces and stir them into the batter. If your fruit is already very small (like blueberries), you can leave it whole or lightly mash it with a fork. Cook the pancakes as usual and you'll have apple, berry, or mango pancakes - with an extra portion of protein.
Pancakes at your next party?
By the way, pancakes are also great for parties! Why not set up a protein pancake bar? I promise it will be a hit with young and old alike. Especially at children's birthday parties, it's an activity the little ones will probably remember forever!
For this, we need several batters: plain, with different types of fruit, and with different protein powders (e.g. chocolate or hazelnut). Here, you can follow your own taste and your guests' preferences. Cook the pancakes in advance at your leisure before the party and place them on a large wooden board. Prepare various toppings to go with them: sauces, sprinkles, fruit, and savory options. Everything your heart desires!

Important: Remember to label everything so that a chocolate pancake with fried mushrooms doesn't accidentally end up on someone's plate! Although... maybe that's the combination we never knew we needed.

Plant-based milk alternative → milk of all types, both plant-based and animal-based
Buckwheat flour → all types of flour; if your protein pancakes are to be gluten-free, make sure to use gluten-free flours such as almond or oat flour
Protein powder → instead of protein powder, you can use an equal amount of flour
Banana → 50-60 g applesauce
Flaxseed egg → chicken egg or other vegan alternatives such as a chia egg
Cream of tartar baking powder → regular baking powder
Cinnamon + vanilla → you can either leave them out or replace them with other ingredients (e.g. tonka bean, speculoos spice)
Coconut oil for cooking → all types of oil + fat (preferably not a strongly flavored oil such as olive oil, as its flavor comes through very strongly in the pancakes)
Maple syrup for sweetening → honey, sugar, and anything else that is sweet!
*We like to use cream of tartar baking powder because, unlike regular baking powder, it contains no added phosphates.
