Zubereitung
Mix your peanut dip for the summer rolls: Simply add all the ingredients to a small bowl and stir them together. Season to taste with soy sauce or salt and lime juice. Add enough water or coconut milk until the dip has a creamy but not too soft consistency. Don't worry, at first it may seem as though the dip is becoming “crumbly,” but this will resolve itself if you stir vigorously.
Now things get exciting: We have to fill and fold the summer rolls! You'll find detailed instructions and important tips further below.
Recipe Note
This summer roll recipe is vegan, delicious, and looks impressive too - surprise your loved ones with fresh summer rolls. They are sure to be delighted!
Summer Roll Sauce
You definitely need a delicious sauce with summer rolls. A favorite among many: peanut sauce. An Asian-inspired peanut sauce makes the summer rolls even more flavorful and irresistibly delicious! That's why we also included peanut sauce with the summer rolls in our vegan summer roll recipe.
Our sauce is super quick and easy to mix together, and you only need a handful of ingredients. The most important one is a good peanut butter that is intense in flavor and pleasantly creamy.
Dip your summer rolls in the sauce or even add some sauce directly inside the roll for an extra creamy experience.
Here are some more delicious sauce ideas for you - feel free to combine several sauces and create an entire dip buffet:
Sesame: Tahini, lime juice, soy sauce, water
Spicy Pineapple: Finely chopped pineapple, cilantro, lime juice, chili
Hoisin: Hoisin sauce, garlic, lime juice
Spicy Mango: Puréed mango, lime juice, chili, soy sauce
Ginger: Soy sauce, ginger, garlic oil, rice vinegar
Whichever dip you ultimately choose, they all go well with our summer roll recipe (vegan).
Perfect for groups | the best summer roll ingredients
The great thing about summer rolls is that you have complete freedom when it comes to how you want to fill, dip, and serve them:
Our summer roll recipe is vegan, so our summer rolls contain tofu or are simply summer rolls with vegetables. However, you can also make the summer rolls vegetarian or offer an animal-based source of protein for meat eaters.
Summer Rolls Dips: Summer rolls with peanut sauce are very popular, but you can also make many other dips, such as a sesame dip, garlic sauce, or vegan yogurt dip. Your creativity knows no limits.
Important information for people with celiac disease: Both rice paper and glass noodles are gluten-free - usually, at least. Nevertheless, watch out for possible cross-contamination and check the information on the package.
No complicated ingredients: Unlike other recipes, where you absolutely need the ingredients described, this vegan summer roll recipe gives you plenty of freedom - you definitely need the rice paper, otherwise things will be difficult. For all other ingredients, our substitution table offers alternatives, such as lemon juice as an alternative to rice vinegar.
My tip: Summer rolls are also a great idea for a social evening - everyone can fill their own rolls at the table. This way, everyone can decide for themselves what goes into their roll - also perfect for children or groups with diverse tastes, where everyone likes something different. It's best to have the vegan summer roll recipe ready to hand, as I'm sure you'll be asked for it often! ;)
What goes into summer rolls?
When making summer rolls for the first time, people often wonder what to fill the small rice paper rolls with. Don't worry, we have lots of delicious ideas for your summer roll fillings. Of course, you can also vary from our vegan summer roll recipe!
Summer roll fillings - ideas:
Vegetables & fruit:
Crunchy vegetables such as carrot, cucumber, bell pepper, radish, kohlrabi, and spring onions
Fresh fruit such as mango, pineapple, or pomegranate seeds
Herbs and greens such as mint, arugula, cilantro, and Thai basil
Special ingredients such as avocado or sprouts
Proteins:
(Smoked) tofu
Seitan
Legumes such as lentils or chickpeas

Make summer rolls yourself | Vegan summer roll recipe
Although Vetain's vegan summer roll recipe is actually simple, you quickly encounter a challenge: How do you fold the rolls so that they hold together well and don't turn into a rice paper mess?
Here is a step-by-step guide:
Good preparation is everything! You need a slightly deep plate filled with lukewarm water. You also need a suitable surface on which your summer rolls won't stick later: either a (moistened) wooden board or a damp kitchen towel. You need one surface for folding the summer rolls and another for storing the finished rolls.
Dip a sheet of rice paper in the water for a few seconds (approximately 5 seconds). If you leave it in the water for too short or too long, shaping it will be more difficult. But don't worry, after a few attempts you'll get the hang of it.
Place the damp rice paper on your work surface.
Now it's time to add the filling: Place your vegetables and other ingredients centrally on the rice paper, slightly below the middle. Stack everything on top of each other - don't spread it out too much across the paper.
Caution: Don't overfill it, otherwise the rice paper will tear later. ;) But I would be lying if I said this had never happened to me. The same applies here: Practice makes perfect - or makes you perfect.
Now fold the left and right sides of the rice paper inward, over your filling.
Fold the bottom part over your filling.
Now grasp the roll that is forming and roll it up fairly tightly with the remaining paper.
Tips:
If your rice paper is very sticky, this is a sign that you soaked it in the water for too long.
If your rice paper tears while rolling, you should soak it in the water a little longer.
Cover your finished spring rolls with a damp kitchen towel; this will keep the summer rolls fresh until you serve them.
This vegan summer roll recipe is sure to turn out perfectly!
